Traditional Portuguese grilled mackerel are served with Spanish sauce, lettuce, tomatoes and peppers salad.
· 1 bunch of parsley
· 2 teaspoons paprika
· 2 dl olive oil
· 1 dl CRISTAL vinegar
· 1 garlic clove, minced
· 1 onion, chopped
· 1 salt to taste (optional)
Mince the onion and the garlic clove to a gravy boat or bowl.
Add the chopped parsley and a pinch of salt.
At serving time add the olive oil and vinegar.
These two ingredients must be added just before serving to prevent the parsley from withering.
